Description
Our Trebbiano grapes, after being hervested by hand in September, are placed on special racks, where they remain to dry until the following year. From their pressing, a must with coppery color is obtained, very rich in sugars. After a period of aging of at least 6 years in small oak and chestnut barrels, the must is turned into wine by the so-called “mother”, autochthonous yeasts selected over the decades. The result of much work is a sweet wine with typical oxidative aromas, which finds its roots in the peasant tradition of Tuscany. The color is amber, the nose perceives notes of raisins, acacia honey and jam. Reccomended is the combination with blue cheeses, at the end of the meal with dry pastries.
